I think Char Kway Teow is one food that very few Singaporeans don’t eat. You will more likely be hearing them saying that they have to eat it less often because of the high cholesterol level blah blah blah.

Seriously, nothing beats Char Kway Teow when it comes to unhealthy hawker food. I mean the seller pours in great amount of oil, pork lard, sweet soy sauce, light soy sauce, together with the spirit of the wok(wok hei) and then last but not the least, raw cockles. What other food can be more hazardous to your health?

Now in the market there are so many versions of Char Kway Teow but clearly they’re separated only by this few qualities – how wet, how sweet and how much wok hei. If you guys have been to Marine Parade Hawker Centre, then you would had came across this Apollo Char Kway Teow which is completely wet like Satay Bee Hoon.

Now if you think that a Char Kway Teow that looked like Stay Bee Hoon sounds strange, then let me tell you that this brand of Char Kway Teow is quite popular around that area ok? Therefore like any good food, you need to queue up for this unfortunately. But after trying it once, I just find that it didn’t impressed me to the point where I would be happy to queue up for it again in the future. Well, I still like my Char Kway Teow the traditional way.

Staying abroad for many years myself, I had many moments where I suddenly craved for something very simple but yet impossible to be found for $2. So if you are in that situation, what do you do? Well for many people, the easier way out is to look into the yellow pages and find the nearest restaurant that has a ‘Singapore’ or ‘Malaysia’ in the name.

But for me I actually found learning to cook something myself the easier way out. It did helped a bit when a Chinese convenience store was located a stone’s throw away from where I used to stay so I can grab any ingredients I need easily.

If you think that Char Kway Teow is a dish that is difficult to whip up, you are half right only because really and truly, the only difficult part is to create that wok hei, the wet and the sweet part are actually very easy to duplicate using any wok. Don’t believe me, try this. Heat some oil, brown some chopped garlic, throw in some horfun or noodles, fry for about 5 mins then pour in sweet and light soy sauce and a few eggs. Stir fry them hard and finally add some water before you take it out. You’ll get every of that Char Kway Teow smell except the wok hei(unless your wok is hot enough).

Too often I found that a Char Kway Teow is too dry or not sweet enough but hardly not enough wok hei so I think a good Char Kway Teow is one that combines the sweetness and the wetness so well that it can complements the wok hei. Not an easy thing to do you may say but yet I know of one that can make me eat the entire plate until I can shout shiokadodo and yet keep asking for more!

Well this stall always seem to get it right in every single plate and I think the consistency level is really what separates it from the rest and clearly that kind of thing is simply the hardest to emulate in any hawker fare.

The undisputed king of Char Kway Teow, the Hill Street Char Kway Teow is one that I’ve been eating for a long long time.

Food: 7/10

To be honest there is no secret about this particular Char Kway Teow except that the wetness, sweetness complements the wok hei wonderfully. It always seem to make me asking for more. It doesn’t help that every single time I ate there, it tasted exactly like the same plate I had in the last time. The sweetness, wetness and ‘wokheiness’ are so accurately complemented that you really can devour the same taste, same sweetness, same wetness, same wokheiness every single time. At least that’s the case for me. Well I have to warn that the waiting time is at least 20 mins even at a non-meals time like 3pm and at least 45mins during lunch time.

From a reliable source, this Hill Street Char Kway Teow is moving out of Bedok and back to Hill Street(where they built their name) area very soon so if you are staying in the east and haven’t tried this Char Kway Teow, then now you know where you should head for your next meal.

Price: $2.5

Recommendation: Char Kway Teow geh harm!(more cockles!)

Conclusion: The best Char Kway Teow that I’ve tasted in terms of consistency. This is the only plate of Char Kway Teow that can make me finished mine and yet yearning for more!

Likes: Sweetness and wetness is just nice. Perfect consistency.

Dislikes: Need to wait too long. Quite a small plate, the kway teow usually only fills 3/4 of the plate and sometimes only 1/2!
